GREEN PEA SOUP.
This is a green pea soup. It is very cheap. But also one of the best soups i will ever know in my entire life. If you spice it up with some nuts, horseradish creme and mint, you will feel blessed for ever. I know i praise this soup. And it deserves it.
For four formal friends
1 leek
3 medium size peeled carrots
4 stalks of celery
3 cloves of garlic
600 grams of frozen green peas
3 dl white wine(Im gonna go through this again, if you use wine that tastes like something you drank when you were 16 years old, your soup will taste excactly like that)
Almost 1 litre of boiling water
1 ORGANIC cube of vegetable stock
1 dl of whole milk
1 knob of butter
1 knob of butter
Loads of mint
Salt and pepper
HORSERADISH CREME
3 cm of peeled and finely grated fresh horseradish
1 dl creme fraiche
Juice for almost half a lemon
Salt and pepper
THIS IS HOW YOU MAKE THE SOUP THAT CAN MOVE MOUNTAINS
Chop the leek in small pieces and rinse in cold water because nobody likes dirt in their food. Chop the carrot in smaller pieces. Chop the celery like the carrot. Chop the garlic really thin.
Take a big ass saucepan and put on medium heat. Add olive oil and all the veg you just chopped. Cook and stir a lot for 5 minutes.
Turn up the heat and add the wine. Let it boil for 2 minutes and the add the peas. Stir for 1 minute and the add water and the stock. Stir again if you want to, its ok.
Bring to boil and do so for 3 minutes.
Take it off the stove. Add milk and mint. Use a hand blender and mix it til´ it is super smooth. I mean you could leave some bits in it but I like it when its super smooth.
Roast some nuts in a pan with out oil.
Put some extra mint leaves on and EAT YOUR SOUP GOD DAMN IT!
