Well hi. I m getting married in one month!! So I thought Id try to eat a little bit better from now on. You know, dont eat bread, pasta or potatoes. Well. I tried. One day it worked. And then me and my fiancé ordered pizza. It was amazing. So. From now on and like I ve dine the last couple of years, Im gonna eat what I want when I want it.
So. Yesterday I wanted to eat a eggplant and squash lasagna.
FOR FOUR PEOPLE PEOPLE!
2 eggplants
2 squash
2 cans of crushed tomatoes
2 yellow onions
4 cloves of garlic
2 sticks of celery
1/2 tablespoon tomato paste
1/2 tablespoon balsamic vinegar
1 dl or 4 oz of red wine, white wine, prosecco or whatever you have in your fridge. You can even use beer.
Salt and pepper
Olive oil
1 small bag of baby spinach
3 handfull of grated cheese (I used a mix between parmesan and cheddar. And I used about 4-5 handulls. Use as much or as little as you please)
DO LIKE THIS OK:
Pre heat your oven to 200 Celsius or 400 Fahrenheit.
Cut the ends of on your eggplants. Then slice it on the lenght(?) about 1 cm thick. Slice the squash in slices the other way, you know, so you get rounds.
Lay the eggplant slices on a tray and add some salt. This is to suck out the water. Do the same with the squash.
Peel your onion and garlic. Chop the onion, celery and slice the garlic in thin slices. Pre heat a medium size casserole and add olive oil. Fry onion, celery and garlic until its soft. Add the tomatoe paste and fry a bit more. Add the canned tomato. Put your alcoholic beverage in one of the tomato cans and shake a little bit so all the tomato juice will come out. Put it in the casserole and bring to boil. Boil until for 10-15 minutes depending on how much liquid there is. The sauce should be quite non-liquid.
Put a grill pan or a cast iron pan on high heat.
Now take some paper and wipe the water thats on the eggplant. Add a little bit of olive oil on each slice.
Grill or fry on high heat until they are a bit browned. Dont add more olive oil. The eggplant can soak up so much oil that you could die.
DONT GRILL OR FRY THE SQUASH. Im just saying.
Ok. Grate your cheese.
Taste the tomato sauce. Maybe you need some more wine, salt or pepper? Add that then an boil a little bit more.
OK NOW ARE YOU GOING TO ASSEMBLE ALL THE INGREDIENTS.
Take a oven-proof form(?) Add a little bit olive oil in the bottom and use your hand to spread it out. OK. Add the eggplant and put an even layer. Then add some fresh spinach (you could use arugula or basil here as well). Then add the tomato sauce. Spread it out even. Now put some squash in there. Just randomly lay them out. Now a layer of cheese.
DO EVERYTHING ALL OVER AGAIN. FINISH OFF WITH FUCK LOADS OF CHEESE AND PUT IN THE OVEN FOR LIKE 20 MINUTES!
Take it out and let it rest for 15 minutes before you eat it with:
SPINACH AND RADISHES!! AND DRINK SANCERRE OF COURSE.

Had breakfast today. Thought it was Tuesday. So I wrote it on Instagram, but it was Wednesday!! Silly me. Quinoa salad with fried egg, tabasco, spinach and radishes.
AND COFFEE.
Wanted to show you my kitchen. Its tiny. Not as tiny as my old kitchen when we lived in 19 square meters but anyway.
As long as you have somewhere to cut and chop, a stove and a sink, you are good to go. Maybe you need some other things like a fridge but GOD START TO COOK NOW!!
